Stew's Chili

List of Ingredients
2 to 3 pound ground venison
1 cup sliced onions
1 1/2 cups chopped green pepper
1/2 cup chopped celery
1/2 pound bacon
1 (28 oz) can of whole peeled tomatoes, undrained
2 tablespoons dried parsley flakes
2 tablespoons chili powder
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon garlic powder
2 cans (about 12 1/2 oz.) kidney beanes, undrained
1 can (about 16 oz) pinto beans, undrained
1 tablespoon packed brown sugar
1/4 teaspoon hickory smoked salt
Recipe
In a large skilet add bacon cut into small squares. Fry over low heat to render bacon fat. Spoon bacon into bowl for use later.
Drain fat from pan leaving about 2 tablespoons in the pan. Add onion, celery, green peppers and saute over low heat until tender.
In a large pot pour remaining bacon fat and bacon with ground venison. Cook until venison is browned. Drain excess liquid.
Add sauted vegetables and tomatoes. Bring to a boil. Reduce heat and simmer for 1 1/2 hours.
Add kidney beans and simmer for 15 minutes.
Add pinto beans and simmer for 15 minute.
Serve and enjoy!
