Supercharged Chicken Chili

1 tbsp vegetable oil 15 mL
1 lb ground chicken 500 g
1 medium onion, chopped 1
1 clove garlic, squished 1
1 green pepper, chopped 1
1 can (19 oz /540 mL) diced tomatoes 1
1 can (19 oz/540 mL) red kidney beans (or be a rebel - try chick peas - which would make it chick chick chili!) 1
1 tbsp chili powder 15 mL
1/2 tsp salt 2 mL
1/4 tsp cayenne, or more, or less, or none 1 mL Recipe
Heat the vegetable oil in a large skillet, and cook the ground chicken with the onion, garlic and green pepper for about 5 minutes, until vegetables are softened and chicken turns white.
Stir in the tomatoes, beans, chili powder, salt, and (if you're using it) the cayenne. Bring to a boil over medium heat. Lower the heat and simmer, stirring once in a while, for about 15 minutes, breaking up the lumps of tomato and chicken with your spoon.
Serve sprinkled with shredded cheese - if you like that sort of thing.
