    THE SECRET'S OUT TEX-ITALIA CHILI

    2 lb. ground chuck
    2 lb. Italian hot sausage
    1 large onion, diced
    1 medium can stewed tomatoes
    1 green pepper, diced
    2 cloves garlic, pressed
    2 to 3 cans Mexican type chili
    beans (medium-sized)
    salt and pepper
    2 tsp. chili powder
    red pepper flakes (optional)

    Recipe



    Cook ground beef in large skillet until medium done. In
    skillet, simmer sausage 3/4 covered with water for 15 minutes.
    Drain water. On medium heat, simmer sausage in covered skil-
    let. Prick with fork until medium done. Pour juice into
    ground beef mixture. Slice sausage and remove casing. Combine
    with beef mixture. Mix well. Salt and pepper to taste. Add
    onion, garlic, chili powder, green pepper and stewed tomatoes.
    Simmer 45 minutes over low heat. Add chili beans, including
    juice. Simmer additional 30 minutes. Adjust to taste, adding
    red pepper flakes, if desired.
