    2 lbs. hamburger
    4 (11 oz.) S & W cans kidney beans (save the juice)
    1 (15 oz.) can tomato sauce
    6 lg. tomatoes, blanched, peeled and chopped
    2 med. onions, chopped
    1 jalapeno pepper, seeded and chopped
    6 cloves garlic, chopped
    1 each green and red bell peppers, seeded and chopped
    2 lg. stalks celery, chopped
    2 tsp. cumin
    6 tbsp. chili powder
    1 tsp. oregano
    1 tsp. sugar
    1 tbsp. dry mustard
    Salt and pepper to taste

    Brown and drain hamburger, brown on high heat until the meat crackles. Saute all peppers, onion, celery, garlic until translucent.

    Mix the remaining ingredients in a large pot and bring to boil. Reduce heat and simmer 2 hours. Adjust seasonings if necessary and simmer 2 more hours. Stir the pot often, this scorches easily. Up to 4 cups of water may be added if more broth is desired.

    This recipe makes 2 gallons and freezes well. It is a lot of work, but worth the effort for a "hot/tasty" chili. Serve with a robust garlic/cheese bread. Bueno Apetito!!
