    2 lbs ground beef (or fake Morningstar Farms ground beef if you’re a veggie)
    2 large bell peppers, chopped
    1 lb white mushrooms, quartered
    1 large onion, chopped
    2 celery stalks, chopped
    2 (or more) jalapeños, seeded and chopped
    3 tablespoons butter
    3 tablespoons olive oil
    1 48 oz container spicy V-8 juice
    1 entire bottle Heinz Chili Sauce
    2 lbs chopped tomatoes (canned OK)
    1 cup tomato paste
    2 bottles of beer (one of them flat, or else pour slowly!)
    2 teaspoons dill weed
    2 teaspoons oregano
    2 Tablespoons cumin
    2 bay leaves
    1 teaspoon garlic powder
    2 teaspoons red pepper flakes
    Chili powder to taste (start with 1 tablespoon)
    Dash of Worcestershire sauce
    32 (or more, if you like) ounces of soaked, drained beans (plain ol’ chili beans are fine, but crazier beans are encouraged, canned beans are fine)

    Recipe



    1. Split chopped onions in half

    2. In one large sauté pan, sauté ½ onion and mushrooms over medium heat in a mixture of 1 tablespoon butter and 1 tablespoon olive oil. Cook mushrooms down until they’re ½ as big as they started.

    3. In another large sauté pan, sauté ½ onion, peppers and Jalapeños in the same manner.

    4. In a third pan, cook the (fake) ground beef the same manner.

    5. Have yourself a beer. You’ve been working hard. (this is why the recipe calls for 2 bottles)

    6. In a BIG soup pot or crock pot combine all ingredients EXCEPT the beans. Simmer for at least one hour. Add water or tomato juice if it gets too thick.

    7. Add the beans and simmer at least 30 minutes but can simmer pretty much forever. It’ll just keep getting better. Now’s a good time to taste for heat and add more chili powder or hot sauce if desired.

    8. If you follow the recipe as is the chili will be damn tasty but pretty mild as far as chili goes. If you want it hotter, increase the jalapeños and/or chili powder, or add your favorite hot sauce

    Comments:
    Serve over brown rice with any or all of the following:

    -Sour cream
    -Grated cheese
    -Tortilla chips
    -Chopped tomato
    -Chopped peppers
