1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3 tablespoons butter
3 tablespoons margarine
1/2 cup granulated sugar
1 egg
1/2 teaspoon rum extract
1/4 cup candied pineapple or glace pineapple
1/2 cup shredded coconut
3 dozen maraschino cherries, halves
Recipe
1. Stir together the flour, baking powder and salt.
2. Beat together the butter, margarine and sugar; beat in egg and vanilla.
3. Stir in candied pineapple and shredded coconut.
4. Shape dough into a ball and wrap in plastic wrap; chill several hours.
5. For each cookie, drop rounded teaspoon of dough onto ungreased baking sheets.
6. Top each cookie with a maraschino cherry half.
7. Bake at 350 degrees for 10-12 minutes.
