    When making biscotti or other hand-shaped cookies, dampen your hands with water to keep the dough from sticking to them.

    Because cookie dough is so high in fat, you almost never have to grease cookie sheets.

    Always chill pastry dough before rolling and cutting, and always chill it again afterwards, before baking, to further relax the gluten.
