    5 apples, peeled, cored & chopped
    1 bunch scallions, sliced, both white & green
    1 lb chicken thighs, deboned, skinned, all fat removed, cut into 2x2" pieces
    5 small slices of Swiss cheese
    1 can Campbell's Cream of Chicken soup, fat reduced, well blended with 1/4 cup milk
    1 box Pepperidge Farm Stuffing with Apples & Raisins
    4 Tbs melted butter/margarine
    1 small carton apple juice (the kind kids get in their lunch boxes with attached straws)

    Layer in 3-1/2 qt slow cooker/Crock Pot in same order as above. Pour soup mixture over cheese layer, butter over stuffing and finally juice, making sure that liquid moistens all of the bread.
    Cook on HIGH for 3-1/2 hours and on LOW for another 1-1/2 hours.

    We ate it without anything but since it makes a wonderful sauce and the stuffing sort of disappears into the dish, I recommend serving it with plain rice.
