Apple Steamed Pudding

List of Ingredients
2 eggs
100g/4oz caster sugar
100g/4oz unsalted butter
100g/4oz self-raising flour
55ml/2fl oz milk
pinch of ground ginger
30g/1oz unsalted butter
1 apple
3 tbsp honey
To serve
double cream, to drizzle
sprig of fresh mint

1. Place the eggs, sugar, butter, flour, milk and ginger into a food processor and blend together until the mixture resembles a smooth thick batter.
2. Gently melt the butter in a pan and sauté the apple for 2-3 minutes to soften.
3. Grease a bowl with butter and spoon the sautéed apple in.
4. Drizzle with the honey.
5. Pour the batter mixture into the bowl and cover with cling film.
6. Microwave on high for four minutes, or until well risen and golden.
7. Turn out the pudding onto a serving plate. Drizzle with the cream and garnish with the mint sprig.
8. To make the spun sugar, gently heat the sugar in a heavy-based pan until dissolved and a caramel has formed.
9. Working quickly and carefully, take a spoonful of the caramel and quickly wave it back and forth over a rolling pin to make very fine strands. Quickly gather them up into a ball before they completely set hard.
10. Sit the spun sugar on top of the steamed pudding and serve.
