    3 bananas
    1 pound butter

    1 1/2 cups sugar
    1 cup blanched almond flour, see note
    1 cup all-purpose flour

    2 1/3 cups egg whites
    1 cup milk chocolate chips
    Maple Syrup Ice Cream
    1 cup maple syrup, reduced over heat to 1/4 cup
    2 cups cream
    1 cup milk
    Pinch of salt
    1 teaspoon cinnamon
    4 egg yolks
    Chocolate Sauce
    3/4 cup sugar
    1/4 cup cocoa powder
    1 cup heavy cream
    1 cup milk
    6 egg yolks
    3/4 teaspoon maple extract

    Recipe



    Heat oven to 350 degrees.

    Place unpeeled bananas on a cookie sheet and bake until black, about 30-45 minutes. Allow bananas to cool, then scrape out fruit and mash.

    Reduce heat to 325 degrees.

    While bananas are baking, place the butter in a saucepan over low to medium heat and cook for 20-30 minutes, whisking occasionally, until brown solids form and butter develops a nutty aroma. Set aside to cool.

    In a mixing bowl, sift together the sugar, almond flour and flour. Whisk in egg whites. Slowly whisk in cooled, brown butter. Fold in mashed bananas and chocolate chips.

    Pour into a 9-inch lightly greased loaf pan or ungreased nonstick pan and bake at 325 degrees 20-30 minutes, or until toothpick comes out clean. Remove from pan.

    For the ice cream: Heat the reduced maple syrup with the cream, milk, salt and cinnamon. When it reaches a boil slowly whisk half of the hot mixture into the yolks. Return the yolk mixture to the cream mixture and stir over low heat until it coats the back of a wooden spoon. Mixture may be chilled at this point to thicken and served as a custard. Or, chill ice cream base and process according to ice cream machine instructions.

    For the chocolate syrup: In a sauce pan, combine sugar and cocoa; stir in cream and milk and bring to a boil. Slowly whisk half the cocoa mixture into the egg yolks. Return yolk mixture to cream mixture and stir over low heat until sauce coats the back of a wooden spoon. Stir in extract. Chill in an ice bath.

    To serve: Slice the warm cake about one inch thick. Top with ice cream and pour sauce over.

    Serves eight to 10.

    Cook's notes: Almond flour is available at Whole Foods stores and in the organic baking aisle of some Jewel Food Stores. In lieu of the Maple Spice Ice Cream, use Ben and Jerry's Chunky Monkey because it blends bananas and chocolate.
