    6 sugar bananas (tiny bananas in islands off Florida)
    1/2 cup butter
    1/2 cup sugar
    1/4 cup light rum
    1/4 cup dark rum
    Lime wedges

    Recipe



    Peel the bananas and cut them lengthwise. Melt the butter in a heavy skillet and add the bananas, turning once. As bananas begin to colour, sprinkle with the sugar and continue cooking until sugar is caramelized. Stir and turn gently so as not to break the bananas.

    Combine the rums and heat gently. Pour over the bananas and ignite. Serve with lime wedges. Yield: Six servings.
