Glazed Pineapple Madagascar

List of Ingredients
8 fresh pineapple rings, cored and skinned
1 1/2 TBSP green peppercorns, crushed
2 1/2 oz sugar
1 1/2 cups orange juice
1 1/2 tsp honey
1/2 cup light rum
Recipe
Rub pineapple slices with green peppercorns and sprinkle one side with sugar. Heat a saute pan to very hot, add pineapple rings, sugar side down and allow to caramelize. Turn pineapple, add orange juice, honey and rum. Flame rum. When pineapple is done, remove and place on a dessert plate. Reduce sauce to syrup consistency and pour over pineapple.
Chef Saunders serves this with a scoop of high quality vanilla ice cream, gelato, or raspberry sorbet.
