    2 1/2 cups flour
    1/2 teaspoon baking soda or 1 teaspoon cream of tartar
    2 teaspoons baking powder
    1/4 cup sugar
    1 teaspoon salt
    2 teaspoons cinnamon
    2 teaspoons nutmeg
    2 cups currants or raisins
    1 cup suet, finely chopped
    2 eggs, beaten
    1/2 cup molasses
    1/2 cup buttermilk
    Basic sauce:
    1 tablespoon cornstarch
    1 cup water
    1 1/2 cups sugar

    Sift the flour, soda, powder, sugar, salt and spices. Add the currants and suet, and mix well.

    Add the eggs, molasses and buttermilk, and mix until the dough forms a ball. Wrap in cheesecloth and steam 2 1/2 hours.

    Remove the cheesecloth. Let stand with a lid on it for 15 minutes. Serve with sauce.

    Stir the cornstarch into the water a little at a time until smooth. Add the sugar and stir until blended. Heat slowly, stirring constantly until thick.

    Sauce variations:

    Add the juice and grated rind of 1 lemon or lime.

    Add 1/4 cup rum or 1 teaspoon rum extract.

    Add 1 cup currants or raisins. Stir until the currants become plump.

    Add a vanilla bean or vanilla extract to taste.
