5 tablespoons butter
3 heaping teaspoons light brown sugar
Pinch of nutmeg
Pinch of cinnamon
2 tablespoons rum (151 or Myers Dark are best)
2 tablespoons banana liqueur
1 large scoop of good-quality vanilla ice cream
1 large banana, ripe but firm
1 sprig fresh mint
Powdered sugar for dustingRecipe
Slice the banana to your liking.
Melt butter over medium heat in saute pan. Add brown sugar and nutmeg and cinnamon. Allow the brown sugar to dissolve in butter. Add banana pieces and cook for about 45 seconds. Swirl pan around to flip banana pieces so they brown slightly on both sides.
Carefully add rum and banana liqueur. The goal is to flame the pan for a second. If the flames don't extinguish immediately, put a cover on the pan and they will die down. If using an electric stove, you'll need to use a grill lighter to ignite the liquor with care. Have a cover at the ready.
Place the ice cream in a large bowl and quickly pour the Bananas Foster over the ice cream. Garnish it with a mint sprig and dust with powdered sugar.
You can use any flavor of ice cream. You can use margarine instead of butter. You can dust with chocolate instead of sugar.
Serves 2 or 3.
