    List of Ingredients




    Graham Cracker Crust:
    1 lb. all purpose flour
    6oz graham cracker crumbs
    8 oz. sugar
    15 oz. butter
    130z egg yolks
    1 whole egg

    Recipe



    Put dry ingredients in mixer with a paddle. Add butter and mix until pea-sized pieces form. Add egg and yolks and mix until dough comes together. Roll out, press into individual three inch cake molds, or press into a 8 or 9 inch pie tin. Bake at 350 for eight minutes. Chocolate Truffle:
    3 cups heavy cream
    4 egg yolks
    1 egg
    3 oz brown sugar
    1 1/2 lb semi sweet chocolate

    In pot, place heavy cream and brown sugar. Bring to boil. Temper eggs and yolks, add back and cook. Remove pot from stove and add chocolate. Stir smooth. Pour over baked graham cracker crusts (about 3/4 of the way up individual cake molds or same goes for the pie tin). Freeze for at least four hours.

    Meringue:
    1 cup egg whites
    10 oz sugar
    1 tsp marshmallow extract

    Whip all ingredients until eggs start to peak.

    When chocolate is frozen, pipe meringue on top in pretty design. use a propane or butane torch to toast the meringue. Serves 4.
