Tembleque Coconut Pudding

1 cup coconut cream
2 eggs
3 cups milk, divided
1 oz clear vanilla
1/2 tsp. salt
1/2 cup corn starch
1/2 cup toasted coconutRecipe
Bring coconut cream, milk, vanilla, salt, and beaten eggs to simmer stirring constantly with wire whip. When almost boiling, whip in milk and cornstarch to thicken. Pour into 7"x10" pan and top with coconut.
