    2 oz. Oreo® coarse cookie crumbs
    1 Tbsp. butter, clarified
    5 oz. mocha ice cream, softened
    2 oz. whipped cream
    1 cherry
    1 oz. chocolate sauce
    1 oz. caramel topping
    1 Tbsp. unsalted peanuts, chopped
    1 Tbsp. cocoa powder

    Recipe



    Combine melted butter and cookie crumbs; mix well. Pack the cookie mixture into the bottom of a 3-1/2-inch ring mold. In a cold mixing bowl, whip mocha ice cream until smooth. Place ice cream in a pastry bag, then pipe over cookie crumbs. Place mixture in the freezer; freeze for at least 2 hours or until completely frozen. To loosen the rock, place your hands around the outside of the ring mold and press out onto the center of a round plate. Top with whipped cream. Drizzle the chocolate sauce and the caramel sauce in a tic-tac-toe pattern over whipped cream. Sprinkle the nuts over the entire dish. Dust the plate with cocoa powder. Place the cherry on top of the whipped cream. Serve.
