    "Crazy Plates" by Janet and Greta Podleski (Perigee, 1999)

    List of Ingredients




    1-1/2 cups evaporated skim milk

    1 cup milk

    1/3 cup sugar

    3 tablespoons cornstarch

    1/4 cup raspberry jam

    1 tablespoon frozen orange juice concentrate

    1 prepared angel food cake, cut into bite-sized pieces

    3 cups fresh strawberries, sliced

    Recipe



    * Combine milks, sugar and cornstarch in a medium saucepan. Cook over medium heat until mixture begins to bubble and thicken. Remove from heat. Let cool.

    * Melt raspberry jam in microwave and stir in orange juice concentrate.

    * To assemble, arrange 1/3 cake pieces over bottom of a trifle bowl or a straight-sided glass bowl. Drizzle with 1/3 raspberry mixture. Spread 1/3 custard evenly over cake, followed by 1/3 of fresh berries. Repeat layering twice, ending with berries. Cover with plastic and refrigerate until cold.

    * Makes 8 to 10 servings.
