4 English Muffins
8 poached Eggs
2 tablespoons butter
8 thick slices of tomato
6 slices of bacon, fried crisp and crumbled
Hollandaise sauce
Cracked pepperRecipe
Split and toast muffins. Poach eggs. Melt butter in a skillet and quickly
sauté tomato slices on both sides.
Place a tomato slice on each muffin half and sprinkle with crumbled bacon.
Top with a poached egg and lavishly
dress with Hollandaise. Sprinkle with Cracked pepper.
Blender Hollandaise;
makes 1 cup
3 egg yolks, room temperature
2 tablespoons lemon juice
dash of salt
2 drops of Tabasco sauce
1 stick melted butter
Place egg yolks, lemon juice, salt and Tabasco in a blender. Turn the motor
on and off at medium speed, just until contents are blended.
Heat butter in a small saucepan until bubbly and very hot, don't let it
burn.
Remove the blender cover, turn the motor on high and slowly add the hot
butter until all is added. Sauce should thicken and be very smooth.
