2-1/2 cups shredded cooked chicken
Taco seasoning package
3-1/4 cup water
2 tablespoons canola oil
1 cup brown or wild rice
1 can (8 ounces) tomato sauce
1 teaspoon pepper
1 large tomato, chopped
1/4 cup chopped green onions
8 medium whole-wheat tortillas, warmed

In large deep skillet, combine chicken, Taco spices, and 3/4 cup water. Bring to a boil; reduce heat and simmer, uncovered, 10 minutes. Remove and set aside. In same skillet, heat oil. Add rice; saut�. Add remaining 2-1/2 cups water, tomato sauce, and pepper. Bring to a boil; reduce heat, cover and simmer 20 minutes. Stir in chicken mixture, tomato and green onions; blend well. Heat 5 minutes. Place a heaping 1/2 cup filling on each tortilla. Fold in sides and roll to enclose filling. Place filled burritos seam-side down on baking sheet. Sprinkle with cheese. Heat in 350 F. oven 5 minutes to melt cheese.
Garnish with salsa and guacamole.
