    List of Ingredients




    1 baking potato
    1 lemon
    1/2 cup olive oil
    2-1/2 ounces tarama caviar (see note)
    2 teaspoons water
    1/4 small brown onion, chopped very fine
    1 cucumber (optional, for serving)
    Pita wedges

    Recipe



    Peel potato and cook in boiling water for 25 minutes, or until tender.

    Cut lemon in half and squeeze juice into a bowl. Add olive oil.

    Place caviar, water, boiled potato and onion in food processor and process until well combined. Add lemon juice-oil mixture to food processor and process until creamy.

    Serve in a bowl surrounded with pita wedges. Or cut cucumber in half and hollow out, keeping shell intact. Place filling mixture in a pastry bag and pipe into hollowed out cucumber. Surround filled cucumber with pita wedges.

    Makes about 1 cup.
