    1/2 pound pork shoulder
    1/2 pound boneless lamb shoulder
    1 pound lean beef
    1 cup white wine
    1/8 teaspoon thyme
    1/8 teaspoon salt
    1/8 teaspoon pepper
    Small bay leaf
    1 tablespoon chopped parsley
    1 tablespoon butter
    4 large onions, sliced
    4 large potatoes, sliced
    Optional: carrots, leeks, pig's tail or knuckles

    Cut meat into 2-inch pieces and mix. Marinate in wine and seasonings overnight. Butter large casserole. Cover bottom with a layer of onions and potatoes. Add a layer of meats. Repeat these layers until casserole is filled. Adjust seasonings to taste. Cover, seal lid with aluminum foil or dough. Place in pre-heated 350-degree oven for 1 1/2 hours. Check for tenderness.

    Serves six.
