    Bimini Mike's Bahamian Chowder

    Conch Turbo Sauce

    List of Ingredients




    2 tsb. butter
    2 medium onions
    3 stalks celery
    3 cloves garlic minced
    ½cup chopped parsley
    1 can peeled tomatoes
    6 large fresh tomatoes (quartered)
    1 cup white wine
    1 cup water
    2 red bell pepper
    3 bay leaves
    1tsp. basil
    1 tsp. oregano or 3 chopped leaves of fresh Cuban oregano
    ¼ cup Conch Turbo Sauce
    4-6 yellow tail fillets depending on size
    ½ lb. shelled and deveined shrimp
    2 lobster tails shelled and chopped into 1" pieces (optional)
    ¼ cup olive oil
    2 hot peppers (use your favorite, mine is the TI pepper)

    Recipe



    Heat butter in large sauce pan or Dutch oven. Sauté onion, celery, red pepper, garlic, and hot pepper until tender. Add all other ingredients except seafood. Bring to boil, cover, then simmer 30 min. Add seafood and simmer an additional 30 minutes.
