Squares Frozen puff pastry Each cut into 4 triangles

egg/water Egg wash Mixed well

Cups Red pepper jus See recipe below

Cup Red bell pepper Minced

Cup Celery Minced

Melt the 2 tablespoons butter in saucepan. Add the remaining ingredients. Cook for 3-5 minutes until mixture resembles a paste. Set aside and chill.
Lay body of prawn flat on surface. Spoon 1 tablespoon filling on prawn. Lay triangle of puff pastry on top of filling. With both hands, flip prawn over. Crimp all corners of pastry together and brush with egg wash. Turn prawn back over and place on cookie sheet. Repeat process
11 more times. Brush top of pastry with remaining egg wash. Bake in a preheated 400 degree oven 9-11 minutes. To serve, pour red pepper jus on plate and lay prawns on plate. Serve immediately.
To make Red Pepper Jus Puree 1 red bell pepper, add 1 cup chicken broth, 1 teaspoon black pepper- Pour in a saucepan and bring to a boil. Thicken with cornstarch slurry(made with 1 tablespoon cornstarch and 1 tablespoon water, mixed together).
