    -- 1 3/4 pounds beef or veal, cut into 1-inch cubes
    -- 1 tablespoon olive oil for frying
    -- 1 1/3 pounds potatoes, peeled and quartered
    -- 1 cup onions, chopped
    -- 1/3 pound green beans
    -- 8 cloves garlic, peeled and crushed
    -- 2 whole carrots, peeled and cut into 1/2-inch slices
    -- 1/3 to 1/2 cup vinegar
    -- 3/4 to 1 cup water
    -- 3 or 4 fresh or boiled tomatoes, peeled and coarsely chopped
    -- 1 to 2 teaspoons salt
    -- Peppercorns to taste
    -- 1/2 cup fresh parsley, chopped
    -- Sheet of parchment paperPreheat oven to 325 degrees.

    In a Dutch oven, brown meat with olive oil. Drain and set aside on a paper towel.

    In the pot, layer with some of the potatoes, onions, green beans, garlic and carrots. Layer with some meat. Continue layering vegetables and meat. Make sure that at least 1/4 of the pot is empty once all ingredients are used. Pour the vinegar and water into the pot and finish with a layer of tomatoes. Season with salt and peppercorns. Cover the dish with parchment paper, followed by a lid.

    Bring to a rapid boil on the stovetop. Place the Dutch oven in the oven and simmer for 2 hours or until vegetables are tender. Sprinkle with parsley before serving. Makes 4 to 6 servings.
