Calabazitas con Pollo

List of Ingredients
# 2 zucchini squash
# 4 chicken breasts (with or without ribs)
# 1 tomato
# 1 can of yellow corn
# 1 yellow squash
# 1/2 cup of yellow onions
# 2 minced cloves of garlic
# 1/2 teaspoon of cumin
# 1/4 teaspoon of salt
# 1/4 teaspoon black pepper
# 1 can of tomato sauce
# 3 cups of water
# olive oil or canola oil Recipe
In a sauce pot, add 2 tablespoons of oil. Once the oil is ready, add chicken breasts and cook until no longer pink inside. Lightly brown the chicken. Remove chicken from the pot, add zucchini, yellow squash, onions and tomatoes for about 5 minutes. Then add the garlic and chicken with the vegetables. Add the 1 can of tomato sauce, salt, black pepper and cumin in a blender and mix for about 30 seconds. Add the tomato sauce to chicken and vegetables. Then add the 1 can of yellow corn and 3 cups of water to cooked ingredients. Simmer for about 45 minutes. When serving the dish, it can be served over Mexican rice or white steamed rice; add Monterey jack cheese on top. Enjoy!!!
