Caribbean Island Chicken Supreme

1 tbsp (15 mL) vegetable oil
2 lb (1 kg) skinless, boneless chicken thighs
3/4 cup (175 mL) Heinz Tomato Juice
2 tsp (10 mL) cornstarch
1/2 cup (125 mL) Heinz Chili Sauce, Chunky with Sweet Peppers
2 tbsp (30 mL) brown sugar
1 tsp (5 mL) chili powder
1/2 tsp (2 mL) red pepper flakes
3 cups (750 mL) mixed chopped tropical fruits, such as pineapple, mango and papaya
1 green pepper, chopped
2 tbsp (30 mL) toasted, sliced almondsRecipe
HEAT oil in a large skillet set over medium-high heat; brown chicken all over, about 5 minutes. Drain off fat.
WHISK tomato juice with cornstarch. Stir in chili sauce, sugar, chili powder and red pepper flakes. Pour mixture over the chicken and bring to the boil.
REDUCE heat to low and simmer for 10 minutes. Add fruit and green pepper simmer for 10 minutes or until chicken is cooked through and fruit is tender.
SPRINKLE with toasted almonds. Makes 6 servings.
