Cayman Island Cajun Chicken Roller

List of Ingredients
1 lb diced chicken breast
1 diced green bell pepper
1 diced medium red onion
four 14" flour tortillas
4 oz grated cheddar cheese
2 oz guacamole
1 oz blackened spice
4 leaves shredded romaine lettuce
Tropical Salsa:
Combine the following ingredients:
1/2 ripe mango, diced finely
1/2 red onion, diced finely
1/2 green pepper, diced finely
2 tsp honey
1 tsp black pepper
Recipe
Saut� chicken with one tsp olive oil until cooked through. Add the blackening spice, green pepper and onion and cook for a further 2-3 minutes. Spread guacamole on half of each tortilla and sprinkle with lettuce and cheese. Place a spoonful of the chicken mixture atop each tortilla and roll tightly. Serve with Tropical Salsa and enjoy with an ice cold Corona
