Pork with Bean Sprouts Mushrooms & Capsicum
List of Ingredients
2 tablespoons vegetable oil
2 cloves garlic finely chopped
1 tablespoon finely julienned ginger
1 large red or yellow capsicum julienned
200 g button mushrooms thinly sliced
2 cups bean sprouts washed and drained
400 g red roasted pork cut into 1cm strips
2 spring onions / shallots cut into 4cm

SAUCE
3 teaspoons cornflour
3/4 cup water
1 tablespoon light soy sauce
1 tablespoon oyster sauce
1 teaspoon sugar
1/2 teaspoon sesame oil
1/4 teaspoon white pepper

Try 230g can water chestnuts julienned
250 g canned bamboo shoots boiled 10 minutes --
drained and

Prepare the sauce by placing the cornflour in a small bowl. Stir in
the water, soy sauce, oyster sauce, sugar, sesame oil, and pepper. Mix
until the sugar has dissolved. Set aside. Heat a wok or large frying
pan for 30 seconds then add the oil. When very hot add the garlic and
ginger and stir fry for 5 seconds. Add the capsicum and mushrooms and
stir fry over a high heat until almost cooked 2-3 minutes. Add the
bean sprouts, pork and spring onions then stir fry for 1 minute. Stir
the reserved sauce to combine. Add it to the wok and cook stirring
until it thickens and clears 30 seconds. Transfer to a serving dish
and serve hot.
China - In Chinatowns around the world, bright strips of fragrant
red-roasted pork fillet hang from hooks waiting to be sliced and taken
home. Known as char siew, this delicious pork is used with rice
noodles, vegetables and soup. In this easily made recipe, the pork is
stir fried with capsicum, mushrooms, bean sprouts and spring onions /
shallots for a dish that has contrasting flavours, colours and
textures. Serve it with rice for a main meal.
