Chicken Guajillo

List of Ingredients
4 chicken hind quarters
1 cup coconut milk
1 1/2 cup chicken stock
1 Tbl. ginger
Cilantro (to garnish)
1 cup pineapple
6 Guajillo chiles
Salt to taste
1 medium tomato
1 medium onionRecipe
Sear chicken with small amount of oil in the pan. Roast tomato and onion in a 500 degree oven until burned on the edges. Roast Guajillo chiles in a 500 degree oven for 1 minute until soft. Puree coconut milk, ginger, chiles, onion and tomato in a blender until smooth. Stir in pineapple, chicken stock and salt. Pour mixture over chicken in a shallow baking pan. Place in a 375 degree oven for 45 minutes.
Serves 4.
