    Cooking spray
    4 c. sliced onion
    1/2 t. sugar
    1 1/1/4-lb. center-cut beef tenderloin
    1/2 t. EACH kosher salt, garlic powder, dried oregano, black pepper
    1/4 t. ground cumin
    6 T Chimichurri (see recipe)

    Cut tenderloin lengthwise with the grain into 6 even steaks. Place 1 steak between 2 sheets of heavy-duty plastic wrap, flatten to an even thickness using a meat mallet or rolling pin. Repeat procedure with remaining steaks. Combine salt, garlic powder, oregano, pepper and cumin, rubbing both sides of steaks.

    Place steaks on a grill rack coated with cooking spray and grill 2 minutes on each side or until desired degree of doneness. Cut steak across grain into thin slices. Top each steak with onion mixture. Drizzle each serving with 1 tablespoon Chimichurri.

    Chimichurri (Garlic-Parsley Sauce)

    2/3 c. vegetable broth
    1/2 c. EACH, minced fresh parsley, fresh onion, red bell pepper
    1/4 c. white vinegar
    1/4 c. extra-virgin olive oil
    1 t. EACH: kosher salt, dried oregano, crushed red pepper
    1/2 t. black pepper
    4 garlic cloves,minced

    Combine all ingredients, stirring with a whisk until well-blended.
