    Hint: Prepare the green peppers while the chicken is baking.

    List of Ingredients




    4 2 1/2-lb. chickens
    4 Tbs. of melted butter
    salt
    1/2 Cup peanut butter
    1/4 Cup mayonnaise
    1/2 Cup chopped peanuts
    3 green peppers
    vegetable oil

    Recipe



    1. Cut chickens into quarters.
    2. Brush with melted butter and sprinkle with salt.
    3. Arrange chicken quarters on a baking sheet breast side down. Bake at 350 degrees for 30 minutes and turn them over breast side up.
    4. Blend peanut butter and with mayonnaise to create a mixture.
    5. Brush peanut-butter mixture over the chickens to cover completely.
    6. Bake for 15 minutes longer until chicken is done. Remove from oven.
    7. Sprinkle chopped peanuts over the chicken.
    8. Blanch green peppers in boiling water until the skins loosen. Remove skins and seeds and cut peppers into 1-inch strips. Sauté the peppers in just enough vegetable oil to keep them from burning, and until they are dark brown.
    9. Sprinkle the sautéed peppers around the chicken upon serving.
    10. Serve with yellow rice on a large platter. Serves 8.
