    3-lbs. Hen or beef (cut medium)
    One - large bell pepper, red (or any color)
    One - medium onion
    One - tablespoon curry powder
    One - habanero pepper (optional)
    Two - cups of parboiled rice
    Three - bouillon cubes
    Four - large tomatoes or (6 to 7 small ones)
    ½ - teaspoon white pepper
    ½ - teaspoon of salt (optional)
    ¼ - teaspoon thyme
    ¼ - to 1/3 cup of oil

    You can also use your favorite fish instead of meat. Cook sauce mixture
    first, then add fish last.

    In large pot or rice cooker, cook 2-cups of parboiled rice, nice and fluffy. (See Cooking Tips if you can’t make fluffy rice).

    Next, use a medium pot to cook the meat. Skin and rinse meat well and place in pot. Add 2-cups of water to pot, ½ - an onion, 1-teaspoon of curry, ½-teaspoon of white pepper, ¼-teaspoon of thyme, ½-teaspoon of salt, and 2-crumbled bouillon cubes. Cover and cook meat on medium for (25 to 30 minutes). Stir occasionally.

    Next, 5-minutes before the meat is done cooking, use a blender to blend together the following: 3-large tomatoes, ½-onion, 1-habanero pepper (remove the stem), 1-bell pepper (remove the seeds). Next, take another medium pot, add oil, heat on medium-low, add ½-teaspoon of curry to hot oil, add ¼-cup of sliced onions to the oil. Mix for a couple of minutes. Drain meat from other pot and add to the pot of oil, curry,
    and onions. (Keep meat juice) Brown meat slowly in hot oil until it becomes brown on both sides.

    Next, while meat is browning in oil, add blended ingredients from blender to the (meat juices) and add 1-crumbled bouillon cube. Bring pot to a boil until sauce bubbles on the top. (Do not stir)

    Next, after the meat has browned on both sides, and sauce has bubbled on top, stir tomato sauce mixture very well and then pour it on top of the meat. Simmer on medium-low for 20-minutes. Stir well. Sauce will thicken. For more sauce, blend additional tomatoes.

    Finally, slice ½- tomato, ¼-onion and add to pot. Mix well. (Cover and let stand for another 5-minutes) Serve stew on top of rice.

    Tip: Stew can be eaten with fried plantines on the side.

    Serves 4-6.
