15ml olive oil
2 medium leeks cut in slices
2 smoked pork knuckles (±850g each)
375ml apricot juice
125ml meat extract
60ml medium cream cherry
salt and freshly grounded pepper to taste
125g dried apricots
125g sultanasRecipe
# Put cast iron pot (no. 2) over medium coals.
# Heat oil and saute leeks until soft.
# Add knuckles and roast until brown.
# Add sauce, extract, cherry and spices. Close lid and simmer for 1½ to 2 hours.
# Enough for six people.
