Fried Philippine Rice

1 cup rice
2 tablespoons butter
2 tablespoons soy sauce
1/2 cup chopped scallions
Touch of minced garlicRecipe
A pot with a thick bottom is necessary for this dish. Pour in 1 cup boiling water and add, little by little, 1 cup rice. Once the water comes to a boil again, reduce heat to very low and simmer until done. Watch for burning and for sticking and be certain that the heat is at its lowest.
When the rice is done, drain and allow it to cool. Fry it in 2 tablespoons butter. Add 2 tablespoons soy sauce, 1/2 cup chopped scallions, and a touch of minced garlic.
