Greek Lemon Chicken and Rice Soup

1. 8 cups chicken broth
2. 1/2 cup fresh lemon juice
3. freshly ground pepper
4. 1/2 cup long grain white rice
5. 1 medium carrot, shredded
6. 4 raw egg yolks
7. 1 cup cooked and chopped chicken
8. 1 lemon, thinly sliced for garnishRecipe
Combine chicken broth, lemon juice and pepper. Bring to a boil, add rice and carrot. Reduce heat, cover and simmer 25 minutes or until rice and carrots are tender. Remove 1/2 cup soup and gradually whisk into raw egg yolks. Whisk back into the soup, add the chicken and heat long enough for the chicken to become heated through. Make sure soup does not boil, or eggs will curdle! Serve with lemon slices and garnish.
