Recipe adapted from one from Shnorig Haladjian of Tamarac with the help of Annie Yahinian.
List of Ingredients
4 eggs
2 cups minced parsley
1 medium onion, chopped minced
3 cloves garlic, minced
1 teaspoon dried mint or 2 teaspoons chopped fresh mint
1 tablespoon flour
Salt and fresh-ground black pepper, to taste
2 cups vegetable or canola oil Recipe
Combine eggs, parsley, onions, garlic, mint, flour, salt and pepper. Heat the oil in deep skillet over medium-high heat. When oil is hot, spoon about 1/4 cup egg mixture into the oil, trying to keep egg batter in a round that is 3 inches in diameter. Cook until golden brown. Turn and cook until golden on the second side. Remove from oil and drain on paper towels. Do not crowd the pan; this will have to be done in batches. Serve warm or at room temperature. Makes about 8 fritters.
