1 head Napa Cabbage, ¼ cur, cored and sliced ½ inch thick
¼ cup Salt
½ cup Rice vinegar
1 Tbs. Sugar
1 Tbs. Chile paste with garlic
1 Tbs. Ginger, fresh (or 1 tsp. powder)
2 clove Garlic, minced
2 each Green onions, sliced thin
Method of Production:

Toss and generously salt the cabbage in a colander. This will allow the cabbage to soften and loss some liquid. Allow the cabbage to sit for at least ½ hour. Mix the remaining ingredients together in a stainless steel bowl that is big enough to hold the cabbage when finished. After ½ hour, rinse the salt from the cage and drain well. Add the rinsed cabbage into the marinade ingredients. Mix thoroughly and place in a deep container, cover and allow the cabbage to marinade for at least 1 day. The spicy pickled cabbage is a great accompaniment to many dishes including Korean Ribs.
