Recipe Introduction
Favourite sausage made with beef liver and oatmeal, usually prepared in a casing about 3 to 4 inches in diameter. This is a favourite Icelandic sausage. It is sliced and served cold, or fried and served hot, sometimes sprinkled with brown sugar. This recipe deletes the casing, make it suitable for home use.
List of Ingredients
1 lb. beef liver
1/2 lb. suet
1 cup oatmeal
3/4 cup whole wheat (or graham) flour
2 tsp. salt
1 tsp. brown sugar
1 1/4 cups milk
Recipe
Mix dry ingredients. Add milk and let stand. Put liver and suet through meat grinder. Mix with dry ingredients and milk. Place in greased 1 quart size baking dish and set in a pan of water. Bake at 300 deg. for 2 hours. Cover dish with foil. Refrigerate. Slice 1/2" thick for serving cold or reheating in frying pan.
