    # 75ml extra virgin olive oil
    # 1 garlic glove, crushed
    # 1 bunch spring onions, finely chopped
    # 1 green chilli, finely chopped
    # 5ml ground cinnamon
    # 5ml ground allspice
    # 2.5ml ground nutmeg
    # 15ml root ginger, grated
    # A few sprigs of thyme
    # Salt
    # Ground Black Pepper
    # 75ml dark rum
    # 60ml dark muscovado sugar
    # Juice 1 lime
    # 900g pork cut into 2cm cubes

    Recipe



    1. Whisk together all the ingredients (no not the meat!) too make the marinade.
    2. Place the pork in a dish and pour over the marinade.
    3. Leave marinating for at least 6 hours.
    4. Thread the pork onto skewers and brush with the marinade.
    5. Cook under a hot grill for 6-7 min on each side or until cooked.
    6. Garnish with the coriander and serve.

    Serves 4
