Jamaican Baked Bananas to go with Curry

3 large ripe bananas, peeled and halved
2 tbs. diet butter
1 tbs. orange juice
1 tsp. vanilla
1/4 c. shredded coconutRecipe
Cut banana in half and then lengthwise.
Place in melted butter in shallow baking
dish, rolling on all sides to cover.
Sprinkle with juice and vanilla, dip on
both sides in coconut. Bake 15 minutes at
375.
