Jamaican Corn And Chicken Chowder

1 pound chicken breast
1 onion, chopped
4 tablespoons butter
2 stalks celery, chopped
4 cups corn (about 6 ears)*
2 medium potatoes, diced
3 -4 tablespoons flour
3 cups chcken stock
1 cup heavy cream (or buttermilk)
Recipe
Melt butter and fry chicken, but do not let brown. Lower heat and simmer 10
minutes or until meat is firm. Cut up
and set aside. Puree 2 c of corn until smooth, leaving 2 cups whole. OR *use 2
cans of creamed corn). Saute'
onion and celery in chicken drippings until soft. Sprinkle with flour and cook
until bubbly. Add rest of ingredients,
and simmer for 15 minutes til the pototo is tender. Stir in cream, salt and
pepper. Heat through, but don't let it boil.
