Jamaican Wedding Cake (Black Cake)

List of Ingredients
2 1/2 cups currants
2 1/2 cups raisins
1 1/4 cups prunes
1 cup dates
1/4 cup cherries
1/4 cup peels
3 cups port wine
1 cup dark Jamaican rum
1/2 cup white Jamaican rum
1 lb butter
2 1/4 cups brown sugar
9 eggs
3 cups flour
3 teaspoon vanilla
2 teaspoon almond extract
1 tablespoon mix spice
1 teaspoon cinnamon
1/4 cup blue berry jam
4 tablespoon brandy
4 tablespoon port wine
1/2 to 1 cup dark Jamaican rum
1/2 a bottle browning
Recipe
place first 6 ingredients in a large glass bottle,add wine and rum,close jar and leave for 2 months at least. cream butter and sugar in a large bowl. beat in eggs,sift the mix spice and cinnamon with the flour.add port wine and brandy to creamed mixture,add flour mixture. Chop the soaked fruits in blender, add to mixture,add browning to give a good brown colour,add enough rum to the mixture to give a consistency in which the fruits almost drown. pour into a well lined and greased tins, bake at 250 degrees on low shelf for about 4 hours, insert a skewer in center of cake should be clean if not bake longer.
Now if you want the three cakes triple the first 6 ingredients, and just separate in thirds after. any problem let me know its very easy.
i also like to put a cup of blanched almonds in the fruits to soak, then grind it up with the fruits
i like to bake at least 2 weeks in advance ,so i can damp with port wine every 2 days or so.
