Japanese Ham Fried Rice

List of Ingredients
2 T. peanut oil
4-6 Exlg. eggs, beaten
1/4 C. peanut oil
4-6 C. steamed short grain rice (I prefer to use day old rice, but it’s not required)
4-6 Green onions, cut into 1-2 inch lengths
1/4 Lb. pea pods, coarsely chopped
1 1/2 C. leftover baked ham, cut into strips or small cubes
2 T. sesame oil
Japanese-style soy sauce, to tasteRecipe
Heat the 2 tablespoons of oil in your wok over high heat. Lightly beat the eggs and slowly pour into the hot wok. Swirl the eggs until set, then turn to set the other side. Remove from the wok and slice into cubes, cover and keep warm. Add the remaining 1/4 cup of oil to the wok over high heat. Pour the cooked rice into the hot wok and stir fry continually until the rice lightly browns. As the rice cooks, add the onions, pea pods, ham and sesame oil. Slowly add the soy sauce, until reaching your desired taste while continuing to stir fry. Stir in the egg cubes and your there. Serves 6.
This recipe can be added to or subtracted from as you see fit. It’s just great and the kids love it also.
