Recipe Introduction
Puerto Rican Sandwich
(recipe makes 4 sandwiches)
List of Ingredients
# Beef Knuckles, sliced very thin (2 lbs)
# Green Plantains - 4
# Onion – 1 medium
# Sofrito – 1/2cup *(see recipe below)
# Green Pepper – 1
# Red Pepper – 1
# Cilantro – 1 bunch
# Vinegar – 1/4 cup
# Adobo Seasoning – 1 Tbsp
# Salt – 1 tsp
# Oil for frying
# Wax Paper
# Mayonnaise
# American Cheese
# Lettuce
# Tomato
# Garlic (2 cloves blended to a paste)Recipe
*Sofrito. In a blender, blend together 1 Green Pepper, 1 Red Pepper and 1 bunch Cilantro. Makes 1 cup.
Prepare Plantain. Remove plantain from skin and cut lengthwise. Fry pieces in oil in a shallow pan, making sure plantain is fully immersed in oil. Cook for 5 minutes. Remove pieces and place between two pieces of wax paper. Smash plantains to desired thickness (about 1/4 to 1/2 inch). Fry flattened plantains in oil for another 5 minutes. Remove and set aside.
Prepare Beef. Combine Onion, Sofrito, Vinegar, Adobo Seasoning and Salt. Bring to a boil. Add Beef and boil for 10-15 minutes.
Spread Mayonnaise and Garlic Paste on Plantains. Assemble sandwiches to liking using the Plantains as 'bread'.
