    (CHICKEN LAYER)

    List of Ingredients




    ½ kg tender chicken
    300 gr prawns, peel the skin
    300 gr tuna fish (tenggiri)
    1 cm ginger
    Salt and pepper to taste

    Sauce :
    2 cup chicken broth
    1 cm ginger
    2 tbs sweet ketchup
    1 tbs corn flour
    ½ onion (bombay)
    1 carrot
    2 leaves celery
    2 leaves onion
    Salt and pepper to taste

    Recipe



    1. Clean the chicken, take off the skin, steam it till cooked. Then take it out, put it in ice water for a moment, take it out and strain it.
    2. Take off the chicken bones and fish bones, then cut up chicken meat and fish meat together with coriander leaves. Add salt and pepper to taste. Put this dough on a heat resistant plate. Make a square dough. Cover the top with the cut off chicken skin above. Steam the chicken for 20 minutes till cooked, remove. Pour the sauce on it. Ready to serve.
    3. Kai Swam Sauce :
    Peel the carrot and slice in length. Slice the onion leaves and the celery finely. Boil the chicken bones in 2 glasses of water, put in carrot, celery leaves and onions. After having boiled, remove and strain.
    Heat the broth together with ginger, put in salt and pepper to taste. Then put in 2 tbs sweet ketchup. Thicken the sauce with dissolved corn flour.
