Filipino Banana Fritters
List of Ingredients
10 pcs. of plantains
2 eggs
3 c. of flour
1 c. + 2 tbsp. of brown sugar
pinch of salt
1/2 tsp. of powdered cinnamon
1 c. of cooking oil
Recipe
Peel bananas. Cut each banana lengthwise into three leaving one end uncut.
Beat eggs. Mix in flour, 2 tbsp. of sugar and pinch of salt.
Heat oil in skillet until it starts to smoke. Dip each banana in the batter, making sure that the cut part is also coated, then lower gently into the hot oil. Cook both sides until golden. Drain on paper towels.
In a small saucepan, melt 1 c. sugar with 2 tbsp. of water. When mixture is syrupy, turn off heat and add cinnamon. Spoon over hot maruya.
