    Chin’s Szechwan Cuisine

    List of Ingredients




    (2 servings):
    1 Tbs. vegetable oil
    ¼ tsp. garlic
    ¼ tsp. ginger root
    ½ medium carrot, sliced
    2 oz. baby corn
    ½ cup straw mushrooms
    ½ cup snow peas
    4 oz. chicken, boneless, skinless
    4 oz. shrimp
    4 oz. flank steak
    4 oz. mushrooms
    1 oz. bamboo, sliced
    1 Tbs. soy sauce
    ¼ tsp. cooking wine
    ½ cup chicken stock
    ¾ tsp. chili oil
    ¼ tsp. white pepper
    ¼ tsp. oyster sauce
    1 tsp. cornstarch

    Recipe



    1. Parboil the vegetables and put to the side. Do not overcook.
    2. Place oil in a hot pan and quickly stir in the ginger and garlic.
    3. Add the chicken and beef and stir for approximately 1 minute, then add shrimp.
    4. When shrimp begins to turn pink, add the vegetables, cooking wine, and chicken stock.
    5. Stir and add the remaining ingredients.
    6. Add cornstarch to desired thickness (probably up to about 1 tsp.).
    7. For a healthier version, parboil the meats and shrimp and stir-fry with non-stick spray instead of oil.
