    2 pounds boneless chicken breasts
    3 green peppers, chopped
    2 small onions, chopped
    8 ounce canned whole tomatoes, drained
    16 ounce canned whole tomatoes
    4 cups fresh, washed mushrooms
    1 whole clove garlic
    ¼ cup olive oil
    1 tablespoon cracked black pepper
    2 tablespoons dried basil, chopped
    1 tablespoon salt
    Grated Romano cheese

    Cut chicken into 2 x 2 inch squares. Sauté onions, garlic and salt in olive oil on medium heat in a large oblong roasting dish on top of stove for 5 to 10 minutes. Increase heat to medium high and brown chicken in this mixture 5 to 10 minutes until cooked through. Add green peppers, mushrooms, all tomatoes, with juice from 16 ounce can only. Crush tomatoes as you cook them. Stir slowly with wooden spoon. While mixture simmers and thickens, add in basil, oregano, black pepper, and salt. Simmer approximately 30 minutes on medium heat as not to burn mixture. Serve on angel hair pasta. Sprinkle with Romano cheese.
