kenyan doughnuts, These are generally made in the coast part of kenya. I would suggest that u add more sugar more like double it(cause they are meant to be sweet but try it out first)
List of Ingredients
2 cups plain flour
3 tablespoons sugar
1 cup coconut milk
2 teaspoons coarsely ground cardamom
1 teaspoon dry yeast = 2 teaspoons of baking powder
oil for frying
Recipe
Mix all the ingredients with coconut milk and bind them into a dough - add water if necessary. Leave this dough in a warm place for 2 - 3 hours to rise. Knead the dough well and roll out 1/2 inch thick and cut into triangle shaped or any desired shape. Leave it for a further 15 minutes. Deep fry each mandazi in hot oil on both sides to a deep tan. Drain on kitchen paper and serve with tea or mbaazi
(pigeon peas).
